Cherry Squares

I was asked by Maria Alvarez to share this recipe.  If you like sugar cookies and fruit, you’ll love it, and it’s crazy simple.  I’ve done it with blueberries, too, but the weight of the cherries seems to work the best.  Some people omit the walnuts, but we love em.  Enjoy!

CHERRY SQUARES    

1/2 lb. butter
1 c. sugar
1 tsp. vanilla OR almond extract (your choice)
2 eggs
2 c. flour
1 c. walnuts
1 can cherry pie filling
Confectioners' sugar for dusting (optional)

Cream butter and sugar, beat in extract and eggs. Add flour gradually, keeping your batter smooth. Stir in nuts. Turn into a greased and floured 9 x 13 inch baking pan.

Dot the top with blobs of cherry pie filling. (You may reserve some of the batter and spot it like you would a cobbler, but I don't. The weight of the cherries causes them to sink a bit as they bake.) Bake at 325 degrees for 35-40 minutes. Cool and cut into squares. Sprinkle with confectioners' sugar if you like.
